Slow cooking in the summer time

Repeat after me…

“It is okay to use your slow cooker after June 21st.”

There are many delicious things that can come out of a slow cooker in the summer.

One of the best things is not turning your kitchen in to a sauna on a hot summer evening by using burners and the oven.

But the best thing is delicious meals like – barbacoa or carnitas – that are large enough to feed a crew while watching the World Cup or feeding parents of newborns or getting ready for the Fourth of July.

Don’t be afraid of the slow cooker – it can make more than fall and winter stews and soups. I promise!

In fact, I’m making a batch of barbacoa right now (have been for 9hrs) and will share my recipe and results once we test out the finished product.
