Tomato Soup

Method

Steps

  1. Preheat oven to 375°F. Spread tomato halves onto a baking sheet and drizzle with olive oil. Season with salt and pepper.
  2. Roast tomatoes.
  3. While tomatoes are in the oven, melt the butter in a large pot.
  4. Add onion and sauté.
  5. Stir in the garlic and thyme and sauté.
  6. Add crushed tomatoes, basils and sugar. Season with salt and pepper.
  7. Stir the mixture and reduce the heat to medium or medium-low and simmer.
  8. Pour broth and roasted tomatoes into the pot. Season with salt and pepper.
  9. Continue to simmer soup, stirring occasionally.
  10. Carefully pour soup into a blender and blend until smooth.
  11. Pour soup back into the pot and stir in the cream until fully incorporated.
  12. Simmer soup for 2 to 3 minutes before ladling into bowls.
  13. Top each serving of tomato soup with fresh basil leaves. Serve.

  20. Add crushed tomatoes, basils and sugar. Season with salt and pepper.
  21. Stir the mixture and reduce the heat to medium or medium-low and simmer for 10 minutes.
  22. Pour broth and roasted tomatoes into the pot. Season with salt and pepper.
  23. Continue to simmer soup, for about 15 minutes, stirring occasionally.
  24. Carefully pour soup into a blender and blend until smooth.
  25. Pour soup back into the pot and stir in the cream until fully incorporated.
  26. Simmer the soup for 2 to 3 minutes before ladling into bowls.
  27. Top each soup with fresh basil leaves. Serve.
