French Onion Soup 2.0

Method

Steps

  1. 1. Heat the olive oil in a Dutch oven over medium-high heat; add onions and sauté for 5 minutes or until tender.
  2. 2. Stir in the sugar, pepper, 1/4 teaspoon salt and reduce the heat to medium. Continue cooking for 20 minutes, stirring frequently.
  3. 3. Increase the heat to medium-high and sauté for 5 more minutes or until the onion is golden brown. Stir in the wine and Worcestershire, and cook for 1 minute.
  4. 4. Add the broth and thyme. Bring the mixture to a boil; cover, reduce heat and simmer for at least 2 hours.
  5. 5. Preheat broiler.
  6. 6. Place the bread slices in a single layer on a baking sheet and broil 2 minutes or until toasted, turning after 1 minute.
  7. 7. Place 8 ovenproof bowls on a sheet pan.
  8. 8. Ladle 1 cup of soup into each bowl. Top each serving with 1 slice of bread and 1 cheese slice.
  9. 9. Broil 3 minutes or until cheese begins to brown.
